So much to tell you about this Slow-Roasted Curry Salmon recipe.
Would you believe that I didn’t even like salmon until about a year ago? I didn’t grow up eating a lot of seafood (basically none) so it has taken me a while to get used to it and enjoy the flavor.
When I was first trying to start eat salmon I did a bunch of reading on the best ways to cook it. There are a lot of opinions on this by the way.
I ran across one recipe that suggested roasting it at a really low temperature because it helps the fish stay tender and also doesn’t have a fishy smell while it is cooking.
Since I was still struggling to like fish this was seriously the perfect solution for me.
I gave it a try and was SO excited that my kitchen didn’t even smell like I had cooked fish and the salmon turned out perfectly tender.
Over the past year I have adapted the method to create this curry salmon recipe. I found that I still liked for the top of the salmon to be a little crispy so I started broiling it right at the end and it created a beautiful crust with a perfectly flaky center. It also tastes amazing served alongside my Instant Pot Coconut Rice.
I will say that I am no salmon expert and this method may not be for everyone but highly recommend giving the slow roasting method a try! Also, I am that person who likes the salmon cooked through so if you want it undercooked just reduce the roasting time a little.

Description
Slow-Roasted Curry Salmon with an almond crust and seasoned with flavorful curry powder. Roasting the salmon at a low temperature yields a perfectly tender filet.
Ingredients
- 2 (6 ounce) salmon filets
- 1 tsp olive oil
- ½ tsp sea salt
- 1 tsp yellow curry powder (I prefer primal palate)
- 1 Tbsp almond flour
- 1 Tbsp ghee or butter
Instructions
- Preheat oven to 250 and line a baking sheet with parchment paper.
- Drizzle the salmon filets with olive oil, salt and curry powder.
- Divide the almond flour evenly between the two filets and gently press down to pack the flour.
- Divide the butter or ghee evenly and put small dollops on top of the filets.
- Place in the oven and let slowly roast for 14-16 minutes (see notes).
- Remove from oven and turn the broiler on high.
- Let salmon broil for 1-2 minutes or until the crust has browned.
- Remove from oven and enjoy over some coconut rice or your favorite vegetable.
Notes
- I prefer my salmon to be well done. Reduce roasting time according to personal preference.
