I am a sucker for Valentine’s Day recipes. I am not sure what is about the cheesy, commercial holiday but I just think all the food around it is so fun.
So here I am giving you some adorable heart shaped peanut butter rice crispy treats made with NO marshmallows or refined sugars.
This is a much healthier version of a rice crispy treat and I actually prefer it over the classic marshmallow one because they are just too sweet for my taste.
These brown rice crispy treats can also be thrown together in one bowl and take not time at all to make since nothing has to be cooked.

Ingredients & What you need to make Brown Rice Peanut Butter Crispy Treats
Creamy Peanut Butter: Is the base for these and acts as a binder and just the insanely delicious part of these crispy treats. I recommend using a natural creamy peanut butter. My personal favorite is Wild Friends.
Coconut Oil: Helps add flavor and texture to these brown rice treats.
Honey: Is where these brown rice crispy treats get their sweetness. It also helps bind everything together and imparts great flavor.
Crispy Brown Rice Cereal: Can’t have crispy treats without it. My personal favorite brand to use is from One Degree. I think they have the best flavor and texture.
Dark Chocolate: Is used for drizzling on top of these brown rice treats. It is an optional add-on but highly delicious, so I recommend it.
Freeze Dried Raspberry: Is another optional add-on but it does impart lots of fun flavor and color. Especially if you are using them for Valentine’s Day. You can take whole freeze-dried raspberries and put them in your food processor or blender and puree until you have a powder.
How to Make Brown Rice Peanut Butter Crispy Treats with no Marshmallows
- Start by greasing an 8×8 pan and line with parchment paper.
- In a large bowl whisk together the peanut butter, coconut oil, honey, vanilla and salt. Stir in crispy brown rice cereal and pour into 8×8 pan. Could it be any easier?
- Press the brown rice crispy cereal mixture into the pan and try to pack it down firmly. You can also place a piece of parchment paper on top to help you evenly press everything down.
- Let set in refrigerator for a minimum of 30 minutes and up to 24 hours.
- Remove from the refrigerator and cut into heart shapes with a cookie cutter or just cut into squares.
- Top with melted chocolate and crushed freeze-dried raspberry, if using.
- Store in an airtight container in the refrigerator until you are ready to eat them.
How do I store Peanut Butter Crispy Treats?
These work best if kept in the refrigerator. Once they get to warm, they will start to fall apart. If you decided to cut yours in to shapes you will need to do it immediately after you remove it from the refrigerator so they don’t fall apart while cutting them.
I would recommend pulling them out of the refrigerator about 5 minutes before you are ready to eat them. You also can eat these rice crispy treats cold. That is how I prefer them.

- Not at all! It is just some Valentine’s Day inspiration. You can just cut them in to squares or rectangles.
Can I omit the freeze-dried raspberry on top of these brown rice treats?
- Absolutely! You can really top these peanut butter crispy treats with anything you want, or you can just leave them plain. Personally, I think the chocolate and raspberry really adds a lot of flavor to these.

2–3 tsp crushed freeze-dried raspberry (optional)
