All of my favorite cookie components like peanut butter, chocolate chips and oatmeal in one pan. Oh and it is a gluten-free cookie skillet. Yes, please!
I have always loved cookie skillets. There is something about digging into a giant pan of cookie that is so satisfying and delicious.
Warm peanut butter chocolate chip cookie skillet topped with some ice cream just takes it to a whole other level of deliciousness.
So let’s get baking (and eating).
Ingredients & What you need to make Peanut Butter Chocolate Chip Oatmeal Skillet
- Coconut Oil: Is a great dairy-free option for making a cookie skillet. I am using it in place of butter or shortening. The flavor of the coconut oil doesn’t really come through but still give the structure needed for this cookie.
- Creamy Peanut Butter: Not only provides structure for this cookie skillet but also provides amazing flavor. Who doesn’t love a chocolate and peanut butter combo?
- Coconut Sugar: Is what I chose for sweetening this cookie skillet. I wanted to keep it free of refined sugars and coconut sugar provides a more complex flavor to this cookie that is reminiscent of brown sugar.
- Eggs: Provide structure for this peanut butter chocolate chip oatmeal skillet.
- Quick Cooking Oats: Are used in the cookie skillet to provide great flavor and texture. I love a good chocolate chip oatmeal cookie and including them in this recipe is reminiscent of a great oatmeal cookie. Quick cooking oats are smaller, and I prefer the texture it provides and how much faster it can cook.
- Oat Flour: A small amount of flour is used in this gluten-free oatmeal cookie skillet recipe. I prefer using oat flour with the oats to enhance that sweet, nutty flavor. If you are gluten sensitive be sure to find a certified gluten-free oat flour.
Peanut Butter for Chocolate Chip Cookie Skillet
Creamy peanut butter gives this oatmeal cookie skillet so much flavor. Be sure to use a natural peanut butter that doesn’t have a lot of extra sugar or oils. My favorite peanut butter to use for recipes if from Wild Friends.
What Skillet Should You Use for a Chocolate Chip Cookie Skillet?
A cast iron is a great skillet to use for baking your cookie skillet. It has a heavy bottom that helps everything cook evenly while also getting the edges crispy and keeping the center soft.
I use a 10-inch cast iron skillet from Lodge. You can find it HERE. If you don’t have a cast iron skillet for this cookie recipe just use a heavy bottomed, oven proof skillet.
How to Make Peanut Butter Chocolate Chip Oatmeal Skillet
- Start by preheating your oven to 350 and greasing a 10 inch cast iron skillet.
- In a large bowl or stand mixer add the melted coconut oil and sugar and mix. Then add in the creamy peanut butter and vanilla and mix until combined. Add the eggs one at a time.
- Add the oats, oat flour, baking soda and salt to the bowl and mix until everything is incorporated.
- Mix in the chocolate chips and then pour the cookie dough into the skillet and press the dough around evenly.

How to Know Cookie Skillet is Done Baking
This can be a little tricker with large cookie skillets, but you want to look for browned edges. Also, the cookie should look a little bit set/firm all around the edges and the middle a bit softer.
Hot Fudge for Peanut Butter Chocolate Chip Skillet
You can serve this gluten-free cookie skillet as is or top with all the sundae components. I would recommend several scoops of ice cream, cacao nibs and the BEST dairy-free hot fudge.

Ingredients
Peanut Butter Chocolate Chip Oatmeal Skillet
- ½ cup creamy peanut butter (145g)
- 1/2 cup coconut oil, melted (105g)
- 3/4 cup coconut sugar (125g)
- 2 eggs
- 1 tsp vanilla extract
- 2 cups gluten free quick cooking rolled oats
- 1/3 cup oat flour (35g)
- 1/2 tsp baking soda
- ½ tsp sea salt
- 1 cup dark chocolate chips
Instructions
- Preheat oven to 350 and grease a 10 inch skillet.
- In a large bowl or stand mixer add the melted coconut oil and coconut sugar and mix. Then add in the creamy peanut butter and vanilla and mix until combined. Add the eggs one at a time.
- Add the oats, oat flour, baking soda and salt to the bowl and mix until everything is incorporated.
- Mix in the chocolate chips and then pour the cookie dough into the skillet and press the dough around evenly.
- Bake for 25 minutes or until edges are browned and the middle is still a little soft.
- Let cool for 5-10 minutes and then top with scoops of ice cream while warm or slice the cookie into wedges and serve.
Notes
Before placing the cookie skillet in the oven you can break a chocolate bar in to large pieces and press the chocolate chunks in to the cookie dough. This will give you large areas of gooey melted chocolate. Not at all necessary but very delicious.

Question…. If I only have a 12 inch lodge cast iron skillet should I change the scale to the middle scale which is doubling the recipe? Thank you Jessi….

I wouldn’t double it. I think a 12 inch skillet will be okay with this recipe. It may be a tad thinner but I think doubling it would be too much.

What happened to the original recipe with no flour? I was going to make it today, and the recipe I saved was changed to this one. I haven’t baked for most of the year, but my husband asked me for this for Valentine’s Day. I also send one to my daughter’s house on this day, because they don’t eat flour or oats of any kind, and all of them love the original skillet cookie. Please post it again! Thank you.
