Stuffed sweet potatoes are one of my favorite weeknight meals. They are incredibly easy to throw together and there are endless options for the filling.
Baked sweet potatoes are filled with some spicy buffalo chicken and topped with a delicious, creamy avocado cilantro sauce.

Ingredients & What you need to make Buffalo Chicken Stuffed Sweet Potatoes with Creamy Avocado Sauce
- Sweet Potatoes: whole cooked sweet potatoes are the base for this recipe. Sweet potatoes can be baked ahead of time to make for an easy weeknight meal.
- Shredded Chicken: gets tossed with buffalo sauce and stuffed in the baked sweet potato. I like to keep the recipe super simple and buy a rotisserie chicken at the store and shred it up for a quick weeknight meal.
- Buffalo Sauce: I love a good buffalo sauce and there are so many cleaner options out there now. My personal favorites are The New Primal and Primal Kitchen. The spicy buffalo sauce pairs perfectly with the sweetness of the potato.
- Avocado: I love topping this buffalo sweet potatoes with a creamy avocado sauce. It pairs perfectly with the spicy buffalo and adds some extra oomph to this easy recipe.
- Cilantro: used to flavor the avocado sauce. It makes a great garnish when assembling the buffalo chicken sweet potatoes.
How to Make Healthy Buffalo Chicken Stuffed Sweet Potatoes
- First you want to preheat your oven to 425 and wrap each sweet potato in parchment paper. Bake for 35-60 minutes (depending on the size of the potato) or until potatoes are tender.
- While the potatoes are cooking add all avocado sauce ingredients to blender or food processor and blend until smooth. Set aside. The sauce can be made a day in advance.
- Add the cooked shredded chicken to a skillet along with the buffalo sauce and cook until heated through and everything is combined.
- Slice the baked sweet potatoes in half and top with buffalo chicken, avocado sauce and more sauce, if desired.
- Serve immediately.
How to Bake a Stuffed Sweet Potato
There are several different ways to cook a sweet potato. My personal favorite is to wrap the sweet potato in parchment paper and place on a baking sheet.
Bake at 425 degrees until sweet potato is tender.
Depending on the size of the sweet potato that could take anywhere from 45-75 minutes.
My personal favorites are Primal Kitchen or New Primal but you can use whatever kind your prefer.

You can use any of your favorite shredded chicken recipes or just shred up a rotisserie chicken from the store. That is one of my favorite options when I am having a busy week.

Ingredients
Buffalo Chicken Sweet Potato
4 medium sweet potatoes
3 cups cooked shredded chicken
½ cup buffalo sauce (I used THIS one)
Avocado sauce
1 ripe avocado
½ cup packed fresh cilantro
2 garlic cloves, peeled
½ teaspoon salt
3 tablespoons lime juice (approximately one lime)
¼ cup mayonnaise
