Weeknight meals made easy. Baked sweet potatoes with spicy buffalo chicken and a creamy avocado cilantro sauce.
Ingredients
Buffalo Chicken Sweet Potato
4 medium sweet potatoes
3 cups cooked shredded chicken
½ cup buffalo sauce (I used THIS one)
Avocado sauce
1 ripe avocado
½ cup packed fresh cilantro
2 garlic cloves, peeled
½ teaspoon salt
3 tablespoons lime juice (approximately one lime)
¼ cup mayonnaise
Instructions
- Preheat oven to 425 and wrap each sweet potato in parchment paper. Bake for 45-60 minutes (depending on the size of the potato) or until potatoes are tender.
- While the potatoes are cooking add all avocado sauce ingredients to blender or food processor and blend until smooth. Set aside.
- Add the cooked shredded chicken to a skillet along with the buffalo sauce and cook until heated through and everything is combined.
- Slice the baked sweet potatoes in half and top with buffalo chicken, avocado sauce and more buffalo sauce, if desired.
- Serve immediately.
