Buffalo Chicken Stuffed Sweet Potatoes

Weeknight meals made easy. Baked sweet potatoes with spicy buffalo chicken and a creamy avocado cilantro sauce.


Buffalo Chicken Sweet Potato

4 medium sweet potatoes

3 cups cooked shredded chicken

½ cup buffalo sauce (I used THIS one)

Avocado sauce

1 ripe avocado 

½ cup packed fresh cilantro 

2 garlic cloves, peeled

½ teaspoon salt 

3 tablespoons lime juice (approximately one lime) 

¼ cup mayonnaise 


  1. Preheat oven to 425 and wrap each sweet potato in parchment paper. Bake for 45-60 minutes (depending on the size of the potato) or until potatoes are tender.
  2. While the potatoes are cooking add all avocado sauce ingredients to blender or food processor and blend until smooth. Set aside.
  3. Add the cooked shredded chicken to a skillet along with the buffalo sauce and cook until heated through and everything is combined.
  4. Slice the baked sweet potatoes in half and top with buffalo chicken, avocado sauce and more buffalo sauce, if desired.
  5. Serve immediately.
