My love for oven roasted Potatoes runs DEEP and then paired with with tahini sauce it just becomes magical.
Is there really anything better than a crispy roasted potato? I think a lot of people would agree with me when I say that potatoes are life.
These are roasted red potato wedges tossed in olive oil and salt and served with a fresh tahini sauce.
So let’s get cooking!
Ingredients You Need
- Red potatoes: are used because of their size and flavor. Once roasted they get crispy on the outside and incredibly soft on the inside. You can easily substitute your favorite variety of potato.
- Tahini: Is the base of the dipping sauce and provides copious amounts of flavor and creaminess. It makes a great dipping sauce for roasted potatoes. Tahini comes from ground sesame seeds. It has nutty, slightly bitter flavor. Its pungent flavor is why it pairs so well with the creamy potato.
- Lemon: used in the tahini sauce to add some acidity and flavor to the sauce.
- Dill: The other hero ingredient in the tahini sauce providing a fresh, herb flavor that pairs perfectly with the tahini and roasted potatoes. This recipe calls for freshly chopped dill.

How to Make Roasted Potatoes with Tahini Sauce
- Start by preheating the oven to 425 and lining a baking sheet with parchment paper.
- Cut the red potatoes into wedges and place them on the pan. Toss the potatoes with the salt and olive oil and roast for 40-45 minutes or until roasted potatoes are crispy on the outside and tender on the inside
How to Make Tahini Dill Sauce
- While the potatoes are roasting combine all of the tahini sauce ingredients (except the water) into a blender or food processor and blend until everything is combined.
- Add 2-3 tablespoons of water to thin the tahini sauce to a desired consistency. The sauce should be pourable but not too thin.
- When potatoes are done roasting I serve them with the Tahini Dill Sauce.
What to Serve with Oven Roasted Potatoes?
Crispy roasted potatoes are great served with protein’s or other vegetables.
I like this Coffee Rubbed New York Strip or Turmeric Roasted Chicken with Broccolini. One of my personal favorites is to serve roasted potatoes alongside a big salad.

Roasted Potatoes
- 2 pounds red potatoes, cut in wedges
- 1 tsp sea salt
- 3 Tbsp olive oil
Tahini Sauce
- 3 Tbsp tahini (I use THIS one)
- 3 Tbsp lemon juice, freshly squeezed
- 2 Tbsp olive oil
- 2 garlic cloves
- 3 Tbsp freshly chopped dill
- ¼ tsp black pepper
- 1/8 tsp red pepper flakes
- ½ tsp sea salt
- 2–3 tbsp water
Instructions
- Preheat oven to 425 and line a baking sheet with parchment paper.
- Cut the red potatoes into wedges and place them on the pan.
- Toss the potatoes with the salt and olive oil and roast for 40-45 minutes or until potatoes are crispy and tender on the inside.
- While the potatoes are cooking combine all of the tahini sauce ingredients (except the water) into a blender or food processor and blend until combined.

Notes
The leftover tahini sauce can be stored in an airtight container in the refrigerator for about 7 days.
