I am really excited to be doing a guest post for Paleo Parents. I have enjoyed following Matt and Stacy for quite some time and am honored to be contributing.
Summer is in full swing here in Tennessee. It seems that we now just skip over spring and just go from winter to summer. Grilling has always been one of my favorite ways to cook. I was that strange kid in high school that would smoke our Thanksgiving turkeys and a myriad of other things. I grill foods all year long but it definitely makes it more enjoyable when you aren’t freezing to death.
Skirt steak has become one of my favorite cuts of meat to grill. It is usually extremely affordable and has a lot of really great flavor. Our local meat farmer had a huge sale on it recently and we stocked up. I finally perfected the marinade recipe and decided I would share it. I also included my favorite cilantro pesto recipe that you can drizzle on top of the steak. We go through cilantro like candy in our house and it complements the steak perfectly.
