This is another recipe that I have wanted to post for a while. I love pasta with red sauce but sometimes I really want a creamy and delicious pasta dish. Basically avocado is the most brilliant piece of fruit EVER! I really have no idea what I would do without it. I have been using avocado a lot lately to give dishes a creamy texture like my dairy-free artichoke dip!
I started making this creamy lemon basil sauce a couple months ago and basically put it on this that and everything. It totally satisfied my desire for creamy comfort food without feeling terrible after. I had some beautiful tomatoes from our Bloomsbury Farm CSA last week and was dying to use them in a recipe and this could not have been more perfect.
I have enjoyed this sauce with spaghetti squash but you can serve it with zoodles, spaghetti squash, or gluten free noodles.

Ingredients
Creamy Lemon Basil Sauce (Approximately 1 Cup)
- 1 Avocado (½ cup mashed)
- 6 garlic cloves
- 1 cup fresh basil leaves
- 1 Tbsp lemon zest
- 1/3 cup lemon juice
- ¼ cup olive oil
- 1/8 tsp cayenne pepper (optional)
- ½ tsp black pepper
- ½ tsp sea salt
Spaghetti Squash
- 2 tsp olive oil
- 3 cups spaghetti squash, cooked (or pasta of choice)
- 1 cup chopped kale
- 8 oz cherry tomatoes
- ½ tsp black pepper
- ½ tsp sea salt
Instructions
- Place all of the sauce ingredients in a food processor or blender and puree until smooth.
- Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot add the tomatoes and sauté about two minutes.
- Add the rest of the ingredients and sauté for another 5 minutes. Add about ½ cup of the sauce and mix thoroughly.
- Serve as is or add some of your favorite protein or vegetables.
Notes
- You can substitute any of your favorite pasta for the spaghetti squash in this recipe.

I would love to take this to a pot luck, but wondered if the avocado will make the dish brown if it’s not served immediately. It looks delicious!
