Salted Tahini No-Bake Cookies. A childhood favorite reinvented.
No-bake cookies are the dessert I make when I really want something sweet but donβt feel like making anything. They seriously take not time to throw together, very few dishes AND you never have to turn the oven on.
Ingredients for Tahini No-Bake Cookies
Tahini
is what I use in place of the classic peanut butter. Tahini is made from ground sesame and has a very nutty flavor. It can be a great substitution if someone has a nut allergy.
Honey
I really wanted to keep these tahini no-bake cookies free of refined sugars so decided to use honey because the flavor pairs so well with salt and tahini.
Oats
Can’t forget the hero of these cookies! I use regular old fashion rolled oats for these cookies. If you have celiac or are gluten sensitive be sure to buy certified gluten-free oats.
Shredded Coconut
is not an ingredient found in a traditional no-bake cookie recipe but I really love the texture and natural sweetness it lends.
Alright, let’s get baking
How to Make Tahini No-Bake Cookies
You want to start with adding the tahini, honey, coconut oil, cocoa powder and salt to a sauce pan. Warm the mixture and stir occasionally until everything is melted and mixed together.
The you take the tahini mixture off the stove and add the oats and shredded coconut. Mix that together and then get scooping.
Scoop about 1-2 tablespoons of the tahini no bake cookie batter. I always prefer to use a cookie scoop like THIS. Sprinkle some salt flakes on top and pop them in the freezer to set.
