I am really excited to be sharing a recipe that I created for the US Wellness Featured Chef Program. I got to share three new recipes featuring some of their amazing products and also got to share a little bit about me and how Jessiβs Kitchen came to be.

I seriously love a good skirt steak. I think that it is such a flavorful and delicious cut of meat if cooked properly and it is also so affordable. The key is really to not overcook the meat which can be difficult with such a thin cut. I love to eat it sliced up with a big bowl of pepper slaw. However, you can easily throw all these components in a taco shell and have some fantastic fajitas!

Description
Grilled skirt steak with pepper slaw. Skirt steak is such an affordable and flavorful cut of meat to use. It is marinated for extra flavor and tenderness and then served with a zesty pepper slaw.
Ingredients
Skirt Steak
- 1lb skirt steak
- Zest of 1 lime
- 1 tsp chili powder
- 1 tsp granulated garlic
- 1 tsp salt
- 1 tsp black pepper
- 3 Tbsp red wine vinegar
- 2 Tbsp olive oil
Pepper Slaw
- 1 red bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 yellow bell pepper, sliced
- Β½ cup cilantro, chopped
- Juice and zest of 1 lime
- 2 Tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
Instructions
- Place the skirt steak and all of the marinade ingredients in a large ziplock bag or shallow dish. Let it marinade in the refrigerator for 3-4 hours.
- Combine all of the pepper slaw ingredients in a large bowl and thoroughly mix. Let set in the refrigerator while steak marinates.
- Pull the steak out of the refrigerator for about 30 minutes to let it come closer to room temperature.
- Preheat grill to 500 and then take the steak out of the marinade and drain and excess liquid.
- Sear the steak about 2 minutes a side and then temp the meat and cook to desired doneness but do not over cook
- 135-140 for medium and 140-150 for medium well.
