I could not be happier with how this Beet and Pineapple Spritzer recipe turned out. It has actually taken me quite some time to like beets. I really will eat just about any fruit and vegetable but I just had the hardest time getting over the βdirtβ flavor that beets have.
I found that I enjoyed yellow beets a lot more because they are a lot more mellow in flavor and slightly sweet. As I started to eat more of those I began to enjoy the red ones a lot more. Then I discovered how awesome the red beet juice is in COCKTAILS and the flavor really became a new favorite of mine. I finally transitioned away from only liking the red beet juice with mezcal and started to drink it without the booze. Hah! Have you ever had my Smoky Beet Cocktail? GUYS, SO GOOD! Next time you feel like hardcore brunchin you need to make it.
Anyway, I wanted to create a non-alcoholic version of a beet drink and ended up creating this spritzer. This juice is a combination of beets, pineapple, carrots, cilantro and then a whole lot of different citrus. Everything is really balanced perfectly. Nothing too sweet, tart or too much βdirt.β
I made this in my Omega VRT Juicer. I know not everyone has one of those but it really is one of the easiest and best ways to make it.
This can be made ahead of time and stored in the refrigerator. You can drinks as it or top with some soda water to give a nice refreshing finish.

Ingredients
- 4 red beets, peeled and halved
- 1 small pineapple, cored and chopped
- 2 carrots
- 1 large grapefruit, rind removed
- 1 orange, rind removed
- 2 lemons, rind removed
- 2 limes, rind removed
- 1 cup fresh cilantro
- Club Soda (optional)
Instructions
- Run all of the ingredients through your juicer and then pour through a fine mesh sieve. Serve immediately or store in the refrigerator.
- Top with soda water before serving (optional)
