I was in South Carolina this past weekend for my brother’s wedding. It was only about an hour outside Charleston so my husband and I decided to stay a couple days in the city since neither of us has been. Charleston has great food and scenery so it was nice to just walk around and eat.
We had our last meal today at Butcher & Bee which was absolutely incredible. I pulled out my phone before leaving the restaurant and was flipping through my Instagram on my personal account and saw an Anthropologie post. I stopped and looked at the picture and then I swear my heart basically stopped and then I think I uttered some weird grunt to my husband because words were not coming out. I realized that they had reposted one of MY pictures and I really was in complete shock. Really one of the coolest moments I have had with the blog. I love the creativity and the brand Anthropologie has created so needless to say, I was FREAKING OUT!!
Then I started getting tons of comments and requests for the recipe. I felt SO bad because I was in the middle of Charleston and had no way to post the recipe right then. So I am posting it now before I go to bed!
This shake is super easy and can be made in a matter of minutes. The base is coconut milk so it lends a super creamy and rich base without being as heavy as ice cream. The chia thickens the shake and the chocolate and strawberry add sweetness and flavor.
Strawberry Chocolate Chip Shake

- 1.5 cups full-fat coconut milk
- 1 cup sliced strawberries
- 1 Tbsp Chia seeds
- 1 tsp vanilla extract
- 2 Tbsp mini enjoy life chocolate chips
- 5–6 cubes of ice
- Place all of the ingredients in a blender and blend on high until creamy and smooth.
- The strawberry and chocolate chips act as the sweetener in this beverage. Feel free to add any honey, maple or stevia if it is not sweet enough.
