Citrus Slaw

Ingredients

  • Slaw
  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • Dressing
  • ¼ cup raw apple cider vinegar
  • Juice of 1 lime
  • 1 jalapeno –deseeded and minced
  • 2 garlic cloves chopped
  • ½ cup chopped cilantro
  • ½ tsp raw honey (optional)
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ¼ tsp chili powder
  • ¼ tsp cumin

Instructions

  1. Combine all of the dressing ingredients in a bowl and whisk together.
  2. Shred the cabbage and carrots in a food processor or with a knife.
  3. Mix all ingredients together and store in the refrigerator.
  4. Let it sit for a minimum of 30 minutes before serving.

Notes

  • I think the small amount of honey helps cut some of the harshness from the apple cider vinegar but it’s not required.
