Buckwheat Waffles
- 1 cup almond or coconut milk
- 3 eggs
- ¼ cup maple syrup
- 3 Tbsp ghee, melted (I used Tin Star Ghee)
- 1 ¼ cup buckwheat flour
- ¾ cup arrowroot flour
- 1 Tbsp baking powder
- ½ tsp cinnamon
- ½ tsp sea salt
Caramelized Peaches
- 2 Tbsp ghee or grass-fed butter (I used Tin Star Ghee)
- 2 Tbsp maple syrup
- ½ tsp cinnamon
- 1 ounce rye, bourbon or rum
- 3 peaches, peeled and sliced
Optional Topping
- Shredded Coconut
- Tin Star Brown Butter Ghee
Instructions
- Add the milk, eggs, maple syrup and ghee to a large bowl and whisk to combine.
- Add all of the dry ingredients and whisk until everything is combined.
- Heat your waffle maker and follow according to manufacturer’s instructions.
- Repeat until all the batter is gone
- Heat a skillet to medium heat and melt the ghee or butter. Add the maple and cinnamon and bring to a light simmer.
- Carefully add the bourbon or rum and let simmer for about 3 minutes.
- Add the peach slices and let simmer for another 3-4 minutes or until peaches are softened and sauce has thickened.
- Let cool slightly and then top the buckwheat waffles with some peaches and brown butter ghee, if desired.
