Buckwheat Waffles with Caramelized Peaches

Buckwheat Waffles

  • 1 cup almond or coconut milk
  • 3 eggs
  • ¼ cup maple syrup
  • 3 Tbsp ghee, melted (I used Tin Star Ghee)
  • 1 ¼ cup buckwheat flour
  • ¾ cup arrowroot flour
  • 1 Tbsp baking powder
  • ½ tsp cinnamon
  • ½ tsp sea salt

Caramelized Peaches

  • 2 Tbsp ghee or grass-fed butter (I used Tin Star Ghee)
  • 2 Tbsp maple syrup
  • ½ tsp cinnamon
  • 1 ounce rye, bourbon or rum
  • 3 peaches, peeled and sliced

Optional Topping

  • Shredded Coconut
  • Tin Star Brown Butter Ghee

Instructions

  1. Add the milk, eggs, maple syrup and ghee to a large bowl and whisk to combine.
  2. Add all of the dry ingredients and whisk until everything is combined.
  3. Heat your waffle maker and follow according to manufacturer’s instructions.
  4. Repeat until all the batter is gone
  5. Heat a skillet to medium heat and melt the ghee or butter. Add the maple and cinnamon and bring to a light simmer.
  6. Carefully add the bourbon or rum and let simmer for about 3 minutes.
  7. Add the peach slices and let simmer for another 3-4 minutes or until peaches are softened and sauce has thickened.
  8. Let cool slightly and then top the buckwheat waffles with some peaches and brown butter ghee, if desired.
