Description

Gluten free Apple Cider Buckwheat Waffles full of flavorful flours, sweet apple cider and warming spices. Topped off with some buttery cinnamon apples and maple syrup.  Enjoyable not only for breakfast but for any meal of the day!

 


Ingredients

Dry Ingredients

  • 1 ¼ cup buckwheat flour
  • ¾ cup arrowroot flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon sea salt

Wet Ingredients

  • 3 eggs
  • ¼ cup avocado oil
  • 2 tablespoons maple syrup
  • 1 ¼ cup apple cider
  • 1 teaspoon vanilla extract

Cinnamon Apples

  • 2 cups apples, chopped
  • 1 tsp coconut oil
  • 1 tsp cinnamon

Instructions

  1. Combine all of the dry ingredients in a large bowl.
  2. Combine all of the wet ingredients in a bowl and whisk to combine.
  3. Add the wet ingredients to the dry and whisk to combine.
  4. Follow the manufacturers instructions for your waffle maker.
  5. Heat a skillet to medium heat and add the apples, butter and cinnamon. Cook until apples are softened. Approximately 10-15 minutes.

Notes

  • This makes about 16-18 squares (5-6 large belgian waffles)
