Vegan Almond Butter Avocado Chocolate Pudding

  • 3 oz dates, pitted (I prefer Date Lady)
  • ¾ cup smashed avocado
  • 1 large banana, peeled
  • 2 Tbsp Maple Syrup
  • 2 tsp vanilla extract
  • ½ cup creamy almond butter
  • ½ cup cacao powder
  • 1/8 tsp pink Himalayan sea salt


  1. Add the pitted dates to a food processor and pulse until coarsely chopped. Add the remaining ingredients and puree until smooth.
  2. Store the chocolate pudding in an airtight container and let cool for 2-5 hours.
  3. Top with cacao nibs or your favorite toppings
