Description
Crispy oven-baked Chipotle Ranch Tacos. Crispy corn tortillas stuffed with taco meat, cheese, pickled jalapeno and creamy chipotle ranch sauce. 12 perfectly baked tacos that will be a total crowd pleaser.
Ingredients
For the Tacos
1 lb Ground Beef
1 packet Taco Seasoning (I like Primal Palate)
12 Corn Tortillas
1 1/2 cups Sharp Cheddar Cheese, shredded
2 Tbsp Avocado Oil
1 can Black Beans, rinsed and drained
1/2 cup Pickled Jalapeños (optional)
For the Chipotle Ranch
1/2 cup Sour Cream
1/4 cup Mayonnaise
2 Tbsp Garden Ranch Seasoning Mix (I like Primal Palate)
1 Tbsp Lime Juice
1 tsp Lime Zest
1/4 tsp Sea Salt
3 Chipotle Peppers in Adobo Sauce (adjust for spice level)
Instructions
Make the Chipotle Ranch Sauce:
- Blend or process all the chipotle ranch ingredients until smooth. Set aside.
Prepare the Taco Meat:
- Heat a skillet over medium-high heat and cook the ground beef, breaking it up with a spatula.
- Drain excess grease and return the beef to the skillet.
- Add taco seasoning and 1/3 cup of water. Simmer until most of the water evaporates. Set aside.
Preheat & Prep the Tortillas:
- Preheat oven to 425°F. Line two baking sheets with parchment paper.
- Arrange 6 tortillas on each pan. Lightly brush both sides with avocado oil.
- Sprinkle some shredded cheese over each tortilla and bake for 3-4 minutes until softened.
Assemble the Tacos:
- Add a heaping tablespoon of taco meat to one side of each tortilla.
- Top with black beans, pickled jalapeños (if using), and a dollop of chipotle ranch sauce.
- Fold the tortilla over and press down gently to form a taco shape.
Bake Until Crispy:
- Place tacos back in the oven and bake for 8-10 minutes until golden and crispy.
Serve & Enjoy:
- Serve warm with extra chipotle ranch and optional toppings like guacamole, pickled onions, or fresh cilantro
Notes
- If tortillas don’t stay closed, stack them slightly on top of one another while baking.
- Adjust the number of chipotle peppers for a milder or spicier sauce.
- Store leftovers in an airtight container and reheat in the oven at 375°F for 5-7 minutes to keep them crispy.
