Apple Spice and Carrot Muffins

Ingredients

  • Wet Ingredients
  • 5 eggs
  • ½ cup coconut oil (melted)
  • 1 tsp vanilla
  • ¼ cup raw honey
  • 1 tsp raw apple cider vinegar
  • Dry Ingredients
  • ¾ cup almond meal
  • ¼ cup coconut flour
  • 1 tsp baking soda
  • ¼ tsp sea salt
  • 1 Tbls cinnamon
  • Add-Ins
  • 1 cup shredded/julienned carrots
  • 2 apples – peeled and diced (about 1.5 cups)
  • ½ cup diced pecans

Instructions

  1. Preheat oven to 350 and prepare a muffin pan or glass ramekins. You can grease them or use muffin liners.
  2. Combine all the dry ingredients and set aside.
  3. Thoroughly mix all the wet ingredients with a mixer or by hand. Then slowly add your dry ingredients to the mixture. Do not over mix.
  4. Fold in the carrots, apples and pecans. Fill each muffin slot about ¾ of the way full. Bake for 20-25 minutes.
